In fact, this is a lovely food and I got this delicious food recipe from my aunt who lives in California. She made this food for us and I was mad about this after eating this food. So I asked her to give me the full recipe of it. Then she did so and I followed her instructions and the information about the ingredients. And now I am also an expert in making this food.
Now I am also sharing my experience about this entire recipe with you in following lines.
Ingredients for Authentic French Ratatouille Recipe:
We need following ingredients;
1 lb of eggplants, should be cut into cubes
And 1 ¾ Tsp of divided salt
2 ½ lbs of tomato, peeled
3 cloves of crushed and chopped garlic
½ Tsp of ground black pepper
A ¼ cup of loosely packed and chopped fresh basil
¾ cup of chopped and loosely packed flat leaf parsley.
We need A 1 ½ lbs of white onions, should be thinly sliced.
3 red or yellow seeded, cored, and chopped bell peppers
And 2 lbs of zucchini, cut into ½ inch slices.
2 lbs of yellow squash
1/3 cup of dry white wine.
And in end, we need extra virgin olive oil of good quality for cooking and serving

Instructions for Authentic French Ratatouille Recipe:
Step 1: First of all, take pepper towels and place a single layer of it on 2 large plates. After this, put the cubed eggplant on these plates and then sprinkle on it with a 1 ¾ Tsp of salt. Then set the eggplant to sit for about 20 minutes.
Step 2: Then take a large sauce pan, and in that large saucepan, gently bake the garlic, black pepper, tomatoes and parsley over a medium high heat and keep it uncovered. So do not boil the vegetables and just cook them slowly as they keep each of them on distinct.
Step 3: After this, take a large skillet and in that skillet, cook the onions and bell pepper over a medium heat for about 10 minutes in a small amount of olive oil by stirring it often. Cook it until the vegetables become lightly brown. Now remove that skillet from the heat and place these vegetables to the tomato mixture.
Step 4: Now tap the dry eggplant with a fresh towel paper and then add it with the zucchini to the tomato mixture. After this, cover up the pot and bake the stew over a low heat medium for about 45 minutes. Cook it until the vegetables become tender. And at the end, add the white wine in it and ¾ Tsp of salt and then cook it again for more 5 minutes.
